Process Auditing and Throughput Improvements
We consider brewery operations to be a whole system, looking at both the “macro” and the “micro” level, considering the micro level to be right on the plant floor.  We will use this idea to enhance brewery operations. 

System modeling on Microsoft Project can be undertaken to highlight both barriers to meeting goals and to illustrate successes. Process auditing can be especially worthwhile to justify automation projects by determining sources of return on investment.

Lautering Improvements
Lautering has two parts: Throughput and Efficiency. It has a direct impact on flavor and the enterprises bottom line. Increasing yield from 88% to 92% on a 100 bbl brew can save about $200,000 per year and justify a $1 MM project to secure results. With other precise changes, throughput can be maintained or improved.

We view Lautering as critical to making quality wort, meeting schedules and maximizing profitability.

Stratified Fermentations
Diagnosing and correcting stratification in fermenters is a key to fermenting throughput and to fermenting’s contribution to beer quality. It adds unnecessary time to fermenting and results in poor yeast quality and poor fermentation characteristics from harvested yeast where stratification has occurred.

Stratification has been found to be relatively common under some circumstances occurring in both the Craft and Major Brewery operations.

SOPs
We partner with a Standard Operating Procedures systems provider.
Our goal is to help breweries have SOP’s that are up to date, uniform in all areas (e.g. brewing, maintenance, packaging), easily edited and readily available. Philosophically, we like to see an SOP group formed from the people who actually do the work: the brewers, the maintenance persons, QA techs and packagers. It requires some training, and it can be highly rewarding!

Breweries are food plants. CIP is critical to properly clean vessels or lines down to the Stainless Steel, and rinse is supposed to completely remove any CIP chemicals. Under no circumstances should CIP cause vessel pressurization or result in a tank crushing vacuums. We provide studies and insight to assure proper vessel and line cleaning assuring that systems are clean, contamination is avoided and that CIP has minimal impact on Brewing Throughput.
